A delicious and nutritious cake, perfect for breakfast or a healthy, guilt-free snack.
Ingredients:
3 ripe bananas, mashed
2 large eggs
1/2 cup vegetable oil (or mild olive oil)
1 cup rolled oats
1 cup whole wheat flour
1/2 cup brown sugar (or sweetener to taste)
1 tablespoon baking powder
1 teaspoon ground cinnamon (optional)
Chopped nuts or raisins to taste (optional)
Instructions:
- Preheat the oven to 350°F (180°C) and grease a loaf pan or round cake pan with a little oil and flour.
- In a large bowl, combine the mashed bananas, eggs, and oil.
- Add the oats, whole wheat flour, brown sugar, and cinnamon. Mix well until all ingredients are incorporated.
- Finally, add the baking powder and mix gently. If using, add the walnuts or raisins.
- Pour the batter into the prepared pan and bake for about 30-40 minutes, or until a toothpick inserted comes out clean.
- Let cool before unmolding and serving.
