Ingredients:
2 large eggs
1/4 cup chopped broccoli (small florets)
1/4 cup diced tomatoes
2 tablespoons chopped or grated Minas cheese
Salt and black pepper to taste
1 teaspoon olive oil
Instructions:
- In a bowl, beat the eggs with a fork. Season with salt and pepper.
- Heat the olive oil in a nonstick skillet over medium-low heat.
- Add the broccoli and tomatoes to the skillet and sauté for 2-3 minutes, or until slightly tender.
- Pour the beaten eggs over the vegetables in the skillet.
- Spread the Minas cheese over the omelet.
- Cook for about 3-5 minutes, or until the edges begin to set and the center is still slightly moist. If desired, cover the pan for 1-2 minutes to cook the top.
- Fold the omelet in half and serve immediately.
