Simple Omelette with Spinach and Cottage Cheese

2 large eggs
1/4 cup chopped spinach
2 tablespoons light cottage cheese
Salt and pepper to taste
1 teaspoon olive oil

Instructions:

  1. In a bowl, beat the eggs with a fork. Season with salt and pepper.
  2. Heat the olive oil in a nonstick skillet over medium-low heat.
  3. Pour the beaten eggs into the skillet. Cook for about 1-2 minutes, or until the edges begin to set.
  4. Spread the spinach and cottage cheese over half of the omelet.
  5. Using a spatula, fold the other half of the omelet over the filling.
  6. Cook for another 1-2 minutes, or until the cheese is slightly melted and the omelet is cooked to your liking.
  7. Serve immediately.
