This fruit salad is perfect for a backyard barbecue or any special occasion, because there are never any leftovers! I believe the secret to this recipe is the citrus dressing, which makes it even more delicious. The salad tastes better the longer it absorbs the juices. Refrigerate for 3 to 4 hours before serving.

Ingredients

Citrus Dressing:
⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup brown sugar
½ teaspoon orange zest
½ teaspoon lemon zest
1 teaspoon vanilla extract

Salad:
2 cups diced fresh pineapple
2 cups strawberries, stemmed and sliced
3 kiwis, peeled and sliced
3 bananas, sliced
2 oranges, peeled and segmented
1 cup seedless grapes
2 cups blueberries

Instructions

Gather all ingredients.

To make the sauce: In a saucepan over medium-high heat, bring the orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil. Reduce the heat to medium-low and simmer for about 5 minutes, until the sauce thickens slightly.

Remove from heat and stir in the vanilla extract. Let cool.

In a large, clear glass bowl, layer the fruit in the following order: pineapple, strawberries, kiwi, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit, cover, and refrigerate for 3 to 4 hours before serving.
