Ingredients:
Dressing (bottom of the jar): 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, salt and pepper to taste.
1/2 cup cooked quinoa
1/2 cup diced cucumber
1/2 cup halved cherry tomatoes
1/2 cup cooked corn
100g grilled and chopped chicken breast
Lettuce or spinach leaves to taste
Instructions:
- In a glass jar with a lid (about 500ml), start by pouring the dressing into the bottom.
- Next, add the cooked quinoa. This helps protect the more delicate ingredients from the dressing.
- Add the layers of cucumber, cherry tomatoes, and corn.
- Top with the chopped grilled chicken.
- Finally, fill the remaining jar with lettuce or spinach leaves.
- Close the jar tightly and refrigerate. It can be stored for up to 3 days.
- When ready to serve, invert the jar onto a plate so the dressing coats all the ingredients, or shake the jar well before serving.
