Jar Salad with Grilled Chicken and Quinoa

A complete and convenient meal to grab and go, perfect for busy people.

Ingredients:

Dressing (bottom of the jar): 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, salt and pepper to taste.
1/2 cup cooked quinoa
1/2 cup diced cucumber
1/2 cup halved cherry tomatoes
1/2 cup cooked corn
100g grilled and chopped chicken breast
Lettuce or spinach leaves to taste

Instructions:

  1. In a glass jar with a lid (about 500ml), start by pouring the dressing into the bottom.
  2. Next, add the cooked quinoa. This helps protect the more delicate ingredients from the dressing.
  3. Add the layers of cucumber, cherry tomatoes, and corn.
  4. Top with the chopped grilled chicken.
  5. Finally, fill the remaining jar with lettuce or spinach leaves.
  6. Close the jar tightly and refrigerate. It can be stored for up to 3 days.
  7. When ready to serve, invert the jar onto a plate so the dressing coats all the ingredients, or shake the jar well before serving.
