Homemade Oatmeal and Carrot Bread

A nutritious and delicious bread, perfect for breakfast or a snack.

Ingredients:

1 cup rolled oats
1 cup whole wheat flour
1/2 cup finely grated carrots
1 large egg
1/2 cup skim or plant-based milk
1/4 cup olive oil
1 tablespoon baking powder
1 teaspoon salt
Sesame or chia seeds for sprinkling (optional)

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a loaf pan (like a pound cake) with a little olive oil and flour.
  2. In a large bowl, combine the oats, whole wheat flour, grated carrots, and salt.
  3. In another bowl, beat the egg, milk, and olive oil.
  4. Pour the wet ingredients over the dry ingredients and mix well until combined. No need to knead, just mix until the dough is smooth.
  5. Finally, add the baking powder and mix gently.
  6. Pour the batter into the prepared pan and, if desired, sprinkle with sesame or chia seeds.
  7. Bake for about 30-40 minutes, or until the bread is golden brown and a toothpick inserted comes out clean.
  8. Let cool slightly before unmolding and slicing.
