A nutritious and delicious bread, perfect for breakfast or a snack.
Ingredients:
1 cup rolled oats
1 cup whole wheat flour
1/2 cup finely grated carrots
1 large egg
1/2 cup skim or plant-based milk
1/4 cup olive oil
1 tablespoon baking powder
1 teaspoon salt
Sesame or chia seeds for sprinkling (optional)
Instructions:
- Preheat the oven to 350°F (180°C) and grease a loaf pan (like a pound cake) with a little olive oil and flour.
- In a large bowl, combine the oats, whole wheat flour, grated carrots, and salt.
- In another bowl, beat the egg, milk, and olive oil.
- Pour the wet ingredients over the dry ingredients and mix well until combined. No need to knead, just mix until the dough is smooth.
- Finally, add the baking powder and mix gently.
- Pour the batter into the prepared pan and, if desired, sprinkle with sesame or chia seeds.
- Bake for about 30-40 minutes, or until the bread is golden brown and a toothpick inserted comes out clean.
- Let cool slightly before unmolding and slicing.
