Whole Wheat Banana Oatmeal Cake

A delicious and nutritious cake, perfect for breakfast or a healthy, guilt-free snack.

Ingredients:

3 ripe bananas, mashed
2 large eggs
1/2 cup vegetable oil (or mild olive oil)
1 cup rolled oats
1 cup whole wheat flour
1/2 cup brown sugar (or sweetener to taste)
1 tablespoon baking powder
1 teaspoon ground cinnamon (optional)
Chopped nuts or raisins to taste (optional)

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a loaf pan or round cake pan with a little oil and flour.
  2. In a large bowl, combine the mashed bananas, eggs, and oil.
  3. Add the oats, whole wheat flour, brown sugar, and cinnamon. Mix well until all ingredients are incorporated.
  4. Finally, add the baking powder and mix gently. If using, add the walnuts or raisins.
  5. Pour the batter into the prepared pan and bake for about 30-40 minutes, or until a toothpick inserted comes out clean.
  6. Let cool before unmolding and serving.
