2 large eggs
1/4 cup chopped spinach
2 tablespoons light cottage cheese
Salt and pepper to taste
1 teaspoon olive oil
Instructions:
- In a bowl, beat the eggs with a fork. Season with salt and pepper.
- Heat the olive oil in a nonstick skillet over medium-low heat.
- Pour the beaten eggs into the skillet. Cook for about 1-2 minutes, or until the edges begin to set.
- Spread the spinach and cottage cheese over half of the omelet.
