Easy Cabbage and Apple Salad

This cabbage and apple salad is one of our favorite summer recipes. The delicious combination of fruits and vegetables in a sweet dressing makes it a must-have at any barbecue or get-together.

Ingredients

3 cups shredded cabbage
1 red apple, cored and chopped (with skin)
1 green Granny Smith apple, cored and chopped (with skin)
1 grated carrot
½ cup chopped red bell pepper
2 scallions, finely chopped
½ cup mayonnaise
½ cup brown sugar
1 tablespoon lemon juice, or to taste

Instructions

In a large bowl, combine the cabbage, red apple, green apple, carrot, red bell pepper, and scallions.

To make the dressing: In a small bowl, combine the mayonnaise, brown sugar, and lemon juice.

Pour the dressing over the cabbage mixture and toss well until all ingredients are evenly coated.
