Vegan Chocolate Pudding

Ingredients:

3 tablespoons cornstarch
2 tablespoons water
1 1/2 cups soy milk
¼ cup sugar
¼ cup unsweetened cocoa powder
¼ teaspoon vanilla extract

Instructions:

  1. In a small bowl, whisk together the cornstarch and water until smooth. Set aside.
  2. In a large saucepan, combine the soy milk, sugar, cocoa powder, and vanilla.
  3. Add a little cornstarch to the pan until well combined.
  4. Bring the pan to a boil over medium heat, stirring constantly, until the mixture begins to boil.
  5. Continue cooking and stirring for another 3 to 5 minutes, or until the pudding absorbs the liquid.
  6. Remove from heat and let cool for 5 minutes. The pudding will continue to absorb the liquid as it cools.
  7. Cover and refrigerate for 1 to 2 hours, or until completely chilled and firm.

Tip: You can replace the cocoa powder with chocolate bars or chopped vegan chocolate chips for an even more intense flavor.
